Placed Durock around shower and will place sheetrock for the remaining wall area. How do you finish where the sheet rock meets the Durock? Do I use thinset or regular spackle? Also can the Durock be finished smooth in order to match where it meets the green board so it can be painted?

You can simply finish the area with thinset just as you would normally if it were sheetrock all around....
a painting tip..... plan to use flat paint in the remainder if your bathroom remodel project as it breathes properly.... semi-gloss and enamel will trap the moisture of a bathroom... and could crack and peel over time - as well as moisture and mildew.
