How do I slope my new shower floor?

The slope of the shower floor is done by applying a layer of mortar to the floor of the shower area. The layer of mortar should be troweled to create a gentle slope from the shower wall edges to the center of the shower where the drain resides. If you are installing tile, the floor should slope 1/4" per foot.

This sloping of the shower floor is done prior to installing the flexible shower pan membrane liner.... to get ready for the tiling of the floor.

I would like to know how to remodel the shower floor. I have no experience with this project,but I love to learn from you the expert. Here are my questions:
What material you use to create a layer of mortar?
What is the flexible shower pan membrane liner?
Please list the direction on how to remodel the shower floor after removing the old one.
By the way, what is the best tool to cut the old tile 4" by 4"?
